This day, among all days, is always one of the hardest for me. As I scroll through the countless Facebook postings from sons and daughters about their dads, I feel sad and a bit envious. I don’t have a dad. I lost him to lung cancer when I was 3 years old. My mom remarried a few years later, but that man was mean and spiteful—not one that I would call a father. It has taken me years to undo the damage he did to my spirit and my heart. But, I am thankful to have emerged from those years much stronger than I was at before. I only wonder who I would be today if I didn’t have such a drastic and painful set-back as a child. I curse the way I still show the damage he has done to me, and other times I find myself so much closer to those who have felt the same pain because of it, sometimes my students. I am happy to have the chance to be there for them and listen as they share their lives with me. I believe we are all connected and I hope to show more of the love that I feel, as I try to expel more of the anxiety and guilt I (still) feel at times. My love is stronger. It has to be.
A good friend this week told me that he meditates each day on three words that are important to him. He tries to live every day expressing and embodying those three words. I admire this about him, and I would like to start doing the same. I think the three words that mean the most to me are love, peace, and happiness.
This summer is going to be a sort of re-birth for me. I plan to heal and re-charge my body, mind, and spirit so I can be stronger, healthier, happier, and love more people in return. While it is a lovely thought, I do not believe that “all you need is love.” This is just the beginning. I think we should all come from a place of love, give it freely, and welcome it in return. Doing this will help bring us the peace and happiness and all the wonderfully delicious things in life we all deserve, for love is infinite, and it finds its way into all things.
I desperately needed this soup this week. It is healing and detoxifying. It will give you the nutrients you need, while allowing your body to get rid of what you don’t. Enjoying food like this is one of the many ways we can be good to ourselves and each other, loving and healing in the process.
Vegan Carrot and Kale Detox Soup
1 bag organic Tuscan kale (Trader Joe’s), chopped into small pieces
4 medium organic carrots, grated or chopped in small pieces
2 cans light coconut milk (Trader Joe’s)
2 cups organic, gluten free vegetable stock (Trader Joe’s is the best!)
2 tablespoons fresh ginger, minced
1 tablespoon extra-virgin olive oil or coconut oil
½ teaspoon turmeric
Sea salt and freshly ground black pepper to taste
Add your oil to a medium soup pot over medium-low heat. Add your ginger and cook for a few minutes before adding the carrots and kale. Cook this for 5-8, stirring occasionally, adding in some salt and pepper. Add the chicken stock and coconut milk. Cook for 8-10 more minutes. Then add the turmeric and more salt and pepper to taste. Serve as a main dish or an appetizer.
