Perfect Vegan Vanilla Latte

Oh, coffee. How I love thee. I remember as a kid I wanted to drink coffee because to me it symbolized maturity and class. I would try it, and hate it, but I kept trying it because I wanted to be mature. Coffee equaled adulthood (and freedom) to me. It’s funny how we spend the first ¼ or so of our lives trying to grow up, and the next ¼ or so trying to stay young. I try to find good eye creams, stay out of the sun, and eat lots of antioxidant-rich foods, but who am I kidding? I’m still getting crow’s feet like the rest of them. In the end, I really don’t think it matters how young I look. It matters that I enjoy every minute of my life, and that includes smiling so much that my face hurts and the laugh lines threaten to stay forever. The lines and wrinkles almost become a badge of honor and a testament to a life well-lived. So, bring on the coffee and all the rest that comes with adulthood. Bring on the stress that I know I can handle, and the joy, and the wide smiles, and the heartbreak. I know I cannot only have the good. I am an adult now, and somewhere along the way I actually started liking coffee, and I started slowing down to gape at this perfect and brief life of ours.

Perfect Vegan Vanilla Latte (no expensive machine needed!)

Makes 2 large lattes (16oz each)

6-9 tablespoons good espresso (I LOVE Intelligentsia—you can find it at Whole Foods!)

2 cups Vanilla almond milk (Whole Food’s 365 brand is awesome. I get the sweetened one!)

Tools needed:

Moka Coffee Pot (stovetop espresso maker). I have a 6 cup Bialetti, which is great. Here are a few other great ones that are inexpensive! Target Primula Stovetop Espresso Maker, Pantone Espresso Maker.

Aerolatte milk frother (steam free and REALLY fast!). I got mine at Crate and Barrel. You can also find them on Amazon and at William’s Sonoma and Bed Bath and Beyond.

Good coffee grinder (we have a Breville burr grinder from Willam’s Sonoma). This was a wedding gift and a bit expensive. If you don’t want to spend that much on a grinder, you can find cheaper ones all over! Like this one.


Grind your beans on the coarser side (regular drip coffee maker/percolator size). Put grounds in the filter part and fill the bottom of your coffee maker with water to the line. Place on the burner as high as you can go (do not let the flame come up around the pot) and let it do its thing. Take off the heat when coffee has stopped filling the upper chamber.

Meanwhile, heat your almond milk in a large glass measuring cup in the microwave for around 2 minutes. When hot, take your Aeorlatte frother and move in slow circles on the bottom of the measuring cup for about 15 seconds. Then bring the frother to the surface so it’s skimming the surface and move in slow circles. The milk should double in size from the foam pretty quickly! I do this separately for each cup.

Divide your coffee and milk into your mugs and serve!
