This is the easiest weekday dish that just happens to be full of flavor. The bell peppers are cool, refreshing, and welcome after a bite of the spicy, salty sausage. I don’t even season the peppers because the sausage is so flavorful! It’s the best kind of meal when you are short on time, and ingredients, but still want something healthy and satisfying. We usually enjoy this with a nice light white wine, like a good tart sauvignon blanc, fume blanc, or voignier.
Simple Spicy Sausage and Peppers
1 package of hot Italian sausages (I get mine at Trader Joe’s)
3 bell peppers (red, orange, and yellow)
1 tablespoon olive oil
In a medium pan, heat the olive oil on medium. Add the sausages, and cook them about 5 minutes per front and back, and then 2 minutes or so on each small side. As the sausages are cooking, cut your bell peppers up into strips. When browned and done, place sausages on a plate to rest, covering them with aluminum foil. Add the bell peppers to the pan and cook for about 5 minutes.
